What is Cà Phê Trứng?
Cà Phê Trứng — Vietnamese Egg Coffee — is a uniquely Hanoian invention from the 1940s. When milk was scarce, Nguyễn Văn Giang at Café Giảng replaced it with whipped egg yolk, creating a drink that is simultaneously coffee, custard, and dessert.
At eggyolk, we honour this tradition with single-origin Arabica beans and organic farm-fresh eggs. The result is a thick, velvety, impossibly creamy crown on top of a bold espresso base.
How We Make It
Source the Beans
Single-origin Arabica from Đà Lạt highland farms, roasted fresh in our Hanoi roastery every morning.
Pull the Espresso
Each shot is carefully pulled from our espresso machine at exactly 93°C and 9 bars of pressure.
Whip the Egg Cream
Farm-fresh organic egg yolks are whisked with condensed milk and a touch of vanilla until thick and silky — this is our secret.
Layer & Serve
The egg cream is gently spooned over the espresso and served in our custom double-bowl ceramic set, which keeps the drink at the perfect temperature.
Enjoy Slowly
Stir gently, or enjoy the contrasting layers — the bitter coffee slowly merging with the sweet, rich egg cream.
